Maple Syrup Pancake Muffins

I’m a big freezer cooking fanatic. I love making extra portions of whatever I’m cooking and freezing them for later use. Having pre-cooked ground beef and chopped veggies in the freezer has saved my butt more then once when I was running late and needed something fast to feed my hungry family.

Maple Syrup Pancake Muffins

The last time I made homemade pancakes, I thought how great it would be to have them in a grab and go size for a on the run breakfast. Thus, the pancake muffin was born. All of the flavor of a fluffy pancake, syrup included, in a convenient little package. Plus, they freeze great. If your eating them at home, you can dip them in a little extra maple syrup if you’d like, but it isn’t necessary at all. They taste great just the way they are, and are the perfect busy morning breakfast.

Maple Syrup Pancake Muffins

Makes 12 muffins

These yummy muffins can be eaten immediately, or cooled completely and then frozen for future meals. For an extra treat, 1/2 cup blueberries or chocolate chips can be added as well.

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs, slightly beaten
  • 1 1/2 cups milk
  • 1/4 cup maple syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla

Directions

  • Preheat oven to 350 degrees. Line muffin cups with liners.
  • Using a wire whisk, blend together the flour, baking soda, salt, and sugar in a bowl.
  • Add eggs, buttermilk, maple syrup, melted butter and vanilla, and stir gently until flour is moistened and pea size lumps remain. Do not over-mix.
  • Divide batter equally among prepared muffin cups. Bake until golden brown and a toothpick inserted into center of muffin comes out clean, 18 to 20 minutes.

Flash freeze the muffins on a baking sheet, then transfer them to a freezer bag. They can be thawed at room temperature over night, or can be warmed in the microwave. I take one from the freezer, wrap it in a paper towel and microwave for about 60 seconds. Microwaves vary though, so test yours for the first time in 30 second increments until it is warmed through.
