Mom, What’s For Supper? Grain-Free Weekly Menu 1/13
It’s been a bad time healthwise for us here on the homestead since Thanksgiving. It seems like no sooner does one of us get over the flu or a stomach virus, then another person has it. Before you know it, it’s been through all 10 of us, then starts all over again with a new bug. No amount of healthy eating, vitamin C or lysol spray seems to help either. I’m at my wits end on what to do, and can only pray for an early Spring, so we can open the windows wide to let fresh air in. Hopefully we don’t have to wait that long for us to feel better, but it’s not looking like it at this point. So there will be lots of foods rich in vitamin C, healthy soups and smoothies on the menu this week to help us build our immune systems up.

This week’s breakfast options: Sunshine Smoothies, Grain-Free Cinnamon Bun Muffins, Assorted Fruits - Lots of Oranges!
This Week’s Lunch Options: Leftovers, Ham and Cheese Roll-ups, Cottage Cheese and Peaches, Hard-Boiled Eggs, Assorted Cut-Up Veggies - Especially Bell Peppers
Supper:
Monday – Chicken Noodle Soup {I’ll be experimenting with zucchini noodles instead of pasta noodles}, Almond “Saltine” Crackers
Tuesday – Salsa Verde Chicken Enchiladas, Restaurant-Style Salsa, Tortilla Chips
Wednesday – Grain-Free Stuffed Bell Peppers
Thursday – Crock Pot Beef Stew, Almond Flour “Corn” Muffins
Friday – YOYO {You’re On Your Own}
Saturday – Grain-Free Fish Sticks, Brussels Sprouts with Bacon and Onion
Sunday – White Chicken Chili, Side Salad
