It’s time for another round of Group D reveals from the Secret Recipe Club. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.

This month my assignment was the delicious blog K & K Test Kitchen. A blog run by the mother-daughter team Kim and Kelsey, who concentrate on using quality, common ingredients in their cooking. After browsing their recipe index, I really wanted to make their Steak and Soba Noodle Salad, which I will be soon, but my families sweet tooth won out, and I made these yummy Oat Bars instead. I played around with the recipe a bit by adding some peanut butter, since that is my favorite flavor of granola type bar.

Peanut Butter Oat Bars

The verdict, my family loved them! They hold their shape, but are chewy, and we loved the peanut butter flavor. My favorite part of the recipe though, was the fact I didn’t have to bake them. Perfect for this time of year. These will definitely become a regular breakfast or snack menu item.

No-Bake Peanut Butter Oat Bars

Ingredients

  • 4 1/3 cups old-fashioned oats
  • 3/4 teaspoon salt
  • 1 - 2 teaspoons cinnamon, depending on how strong you like it.
  • 2/3 cups unsalted butter
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1 cup creamy peanut butter

Directions

  • Mix the dry ingredients together in a large mixing bowl. Set aside.
  • In a medium non-stick pot, melt the butter over medium heat. Once melted add the honey, vanilla, and peanut butter. Stir to combine and allow to come to a gently boil. Simmer for 2 minutes.
  • Pour the butter mixture over the oat mixture and mix thoroughly.
  • Press mixture into an 13 x 9 inch buttered pan, pressing the mixture down evenly using the back of a flat spatula or spoon.
  • Take a knife and score the top of the oat mixture into bar shapes to make cutting easier later on.
  • After the bars have cooled slightly, finish cutting the bars all the way through.
  • Allow to finish cooling completely and enjoy!

  3. I was really excited about these but they were way too salty. I would recommend to anyone looking to make these to half both the salt and cinnamon.

  4. I'm sorry they didn't turn out for you Rachel. Did you use salted or unsalted butter? If you used salted butter, then yes they would have turned out salter then they should have. Also, the amount of cinnamon is a personal preference, some people like a stronger cinnamon taste, and some prefer a milder taste.

  5. Hi Jen :) I know you can substitute pure maple syrup for the honey, but I'm not sure if pancake syrup, which is different from maple syrup would work. I'm thinking it should though. Let me know how it turns out for you once you make it.
