I wasn’t planning on posting a recipe today, but when I found out yesterday that we needed an extra hand in today’s Secret Recipe Club reveal, I was ready. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.
The blog I was able to chose a recipe from was Enriching Your Kid. This blog is run by Shirley, a professional who started off as a Clinical Psychologist, then became a stay-at-home-mom after having her children. Shirley lives in India, and has a lot of tasty and healthy ethnic choices to choose from. Of course my americanized tastes led me to the recipe I decided on. That, along with my already having all of the ingredients called for on such short notice sealed the deal, Nutella Muffins.
Muffins and a cup of coffee are one of my favorite breakfasts. Especially when they’re homemade, they are a filling and nutritious meal to start your day with. Although my family doesn’t like muffins as much as I do, if I add something “special” to them, they gobble them up. Of course Nutella is considered special with my family. : ) The only thing I did differently to the recipe was to use all-purpose flour instead of wheat, which enabled me to reduce the amount of milk called for a bit. These muffins turned out moist and fluffy, yet hearty, with the flavors of banana, chocolate and hazelnut mingling together to make one delicious muffin. Thank you Shirley for an awesome recipe that will definitely be added to our regular menu rotation.

Ingredients
- 1 cup flour
- 1 cup old-fashioned oats
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 egg
- 1/2 cup milk
- 1/3 cup olive oil
- 1 tablespoon salted butter, melted
- 1/2 teaspoon vanilla
- 3 medium, ripe bananas, mashed
- Nutella
Directions
- Preheat oven to 350 degrees.
- Combine the flour, oats, sugar, baking powder and baking soda in a bowl and stir with a whisk until combined. Set aside.
- In a separate bowl beat the egg, milk, oil, butter and vanilla. Add the mashed bananas and stir until thoroughly combined.
- Add the flour mixture to the banana mixture and stir just until combined. Do not overmix.
- Spoon a small amount of the batter into the bottom of a muffin tin that has been lined with paper liners.
- Spoon a tablespoon of Nutella into the center of each cup, then cover with a second spoonful of muffin batter. They should be filled about 3/4 full. I had exactly enough batter to fill all 12 muffin liners.
- Bake for 22 - 25 minutes, or until the center of the muffins look done and tops are light golden brown.
- Allow to cool for 10 minutes, then transfer to a cooling rack to finish cooling completely.
