Corn Chowder

It’s time for another installment of the Secret Recipe Club‘s group D reveal!

We’ve been getting some cooler nights here in Southern Indiana. Dare I say that Autumn time is near? I sure hope so, it’s my favorite time of the year. When the temps start dropping my thoughts turn to comfort foods. Soup, it’s a staple in our house during the colder months, and is a classic comfort food.

So when I was browsing through my assigned blog this month, which is Casey’s Beautiful Disasters, I went strait to her soup section after I read her about page. She is a young cook who’s still in high school, and already has a delicious line-up of recipes on her site. Something I’m sure her family surely enjoys!

As I browsed her list of soups, It was a toss up between her Corn Chowder and Broccoli Cheddar Soup since they both looked yummy. I finally settled on the chowder since I had some fresh corn on the cob I needed to use up.

I reduced the amount of the ingredients just a bit because I only had 4 ears of corn instead of the called for 6. That along with using chicken stock instead of water, leaving out the basil leaf, (personal preference) using heavy whipping cream instead of half and half, and using corn meal instead of flour in order to make it gluten free were the only changes I made to the recipe. And wowsers was this soup good! Thick and tasty, it made a wonderful lunch for me and my husband. I served it with homemade dinner rolls and it made a complete meal.

Corn Chowder

For an extra special touch, top with a few cheese croutons right before serving.

4 ears of corn, shucked
2 Tablespoons butter
1 onion, finely chopped
4 slices bacon, cooked and crumbled
1 teaspoon salt, or to taste
1/4 teaspoon ground thyme
1/4 teaspoon black pepper, or to taste
4 cups chicken stock
4 potatoes, peeled and cubed
1 cup heavy whipping cream
3 Tablespoons corn meal
1/4 cup water

Slice the corn kernels off the cob, and lightly scrape out any juice from the cob with a sharp knife. Set aside.

Melt butter in a medium size pot over medium heat. Add the onion and cook, stirring frequently until the onion has softened and becomes translucent. About 4 to 5 minutes.

Pour in the chicken stock and bring to a boil. Add the corn, potatoes, corn meal mixed with the 1/4 cup of water, thyme, salt and pepper.

Bring the chowder to a simmer, then reduce heat to medium-low and cook for about 15 minutes, or until the potatoes are tender.

Using a potato masher, smash about half of the potatoes in the pot. Stir in the whipping cream and bacon.

Adjust seasonings if needed and bring back to a simmer to heat through. Serve with dinner rolls and enjoy.

  2. I’ve never tried chowder…maybe because it sounds like it’d be gross, but nothing in the ingredients is gross, so I may just have to try this out :P I love corn!

  5. Sarah - I was like you before. The only kind of chowder I had ever heard of was seafood chowder, which I cant stand, so I associated all chowders with it. I was really glad to see there are different kinds!

  6. Melissa - It’s one of our favorites now too, and will be appearing on our menu quite often during the Fall and Winter months.

  9. Jenni - Yes it is, I just got through putting up several bags of fresh corn I cut off the cob in the freezer. That way I can make this yummy soup through the winter time.

  11. I love corn chowder! Still a little hot here in Florida for soup, but come Oct when the temps drop into the 60′s, I will be looking for something hot!
