Pan Fried Cabbage
It’s time for another round of Group D reveals from the Secret Recipe Club. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.
This month my assignment was the delicious blog Collie’s Kitchen. I’ve been on a special elimination diet, so I was a little worried that I would be able to find something on her blog that I could make, that would fit in with my diet guidelines. Find something I did though with this easy and delicious recipe for Pan Fried Cabbage. This dish is super easy to make, and taste amazing. If you like stir-fry veggies, then you will love this yummy way of cooking cabbage. It gives it a delightful flavor that isn’t harsh at all the way fresh cabbage can be. It has a wonder crisp-tender bite to it as well. I made 1/2 a small head of cabbage this way, and wound up eating the whole thing myself. I love it so much that I have had it on 4 different occasions in the last 2 weeks.
I did change the recipe a bit by leaving the bacon out, which is a big no-no on my diet right now.
I can just imagine how good it taste with it though. It was still fantastic with the light olive oil I used instead, and I’m really looking forward to trying it eventually with the bacon. I’m also looking forward to making her recipes for Peanut Butter Fudge, which looks a lot like the kind my mom used to make, and Nilla Wafer Banana Bread, hello banana puddin in bread form, once I can have sugar again. Thank you Nicole for a tasty and easy recipe I can eat to my hearts content while I’m on my diet and beyond.
Ingredients
- 1/2 small head of cabbage
- 1 tablespoon light olive oil
- Salt and fresh ground black pepper to taste
Directions
- Thinly slice or shred cabbage.
- Heat olive oil in a large pan over medium heat.
- Add cabbage and salt and pepper to taste.
- Cook for about 10 minutes, stirring occasionally, or until cabbage is starting to become browned a bit and crisp-tender.
- Adjust seasonings if needed and serve hot.
