I did it, I finally made a yummy, gluten-free pancake! Believe me, I’ve put my family through some rough taste testing. They never once complained though, bless their hearts, in my quest to find a pancake that I could eat, and that tasted good to boot. I have collected A LOT of gf pancake recipes, and after much tweaking and experimenting, I’ve come up with a winner. I still want to try these using buttermilk, but they’re delicious as is.
Pancakes {GF}
1 1/2 cups almond flour
1/4 tsp salt
1/2 tsp baking soda
4 large eggs
3 Tbs water
1 Tbs honey
butter or non-stick cooking spray
Heat pancake griddle or pan over medium low heat. Add butter or spray with non-stick cooking spray.
Mix almond flour, salt, and baking soda in a medium bowl.
Add eggs, honey, and water to the flour mixture and mix well. *Let the batter rest for about 10 minutes, to give the baking soda time to activate. This will help make your pancakes fluffier.
Pour the batter onto hot griddle. (I used a 1/4 measuring cup and it made the perfect size pancakes.)
Cook till the top is covered in bubbles, and the edges look dry. This takes about 3 minutes. Be careful, they will burn quickly if you have the heat to high, or don’t flip them soon enough.
Cook them for about 1 minute on the other side, then serve warm with syrup or your choice of favorite toppings.

These sound very good. I don't have any almond flour right now. Can you make your own? Grinding raw almonds?

Yes you can Susie! Here's how:
Place 1/2 cup whole, blanched almonds in a electric coffee bean grinder.
Put the lid on the coffee bean grinder and pulse several times until a medium-fine textured meal forms. Don't over-grind or you will make almond butter!
Put ground almond meal into a sieve which is sitting in a large bowl. Shake out the almond flour into the bowl. The larger meal and some bigger pieces will be left over. Just leave them in the bowl for now and repeat the process until you have the amount you need. Then add back into the grinder all those small pieces and the courser meal and grind again. Trying to make this in a food processor wont work. I've tried it a couple of times and it turned into almond butter both times!
Store almond meal in the refrigerator or freezer.
