It’s time for another round of Group D reveals from the Secret Recipe Club. The club is a fun monthly challenge I host each month, where each participating blogger is assigned one of the other participating blogs. (Much like a Secret Santa.) No one reveals whose blog they have, they just visit, pick a recipe, and make it. On reveal day everyone posts what they made and the secret is out.
This month my assignment was the delicious blog Lavender and Loveage. It’s run by the talented Karen, and is chock full of tasty creations. I’ve been on the look out for fish recipes for the upcoming Good Friday holiday, and Karen’s blog didn’t disappoint. She has an amazing selection of them. After browsing through the extensive collection, I chose her recipe for Posh Salmon Fish Fingers. Salmon is considered a superfood since it’s a rich source of Omega 3s, which research has shown is beneficial for heart health and a range of diseases & conditions. I’m always looking for ways to incorporate this healthy fish into my diet because of those things, so it was a natural choice for me.
I changed the recipe up a bit by adding some parmesan cheese for flavor, and a little parsley for a pop of color. I also baked it instead of frying to make it a little lower in fat. It turned out amazing! It was flavorful and moist and paired beautifully with the couscous salad I served it with. Thank you Karen for showing me that salmon can be just as tasty breaded, as it’s white fish cousins.
Preheat oven to 375 degrees.
Rinse salmon with water, then pat dry with a paper towel.
Mix together bread crumbs, parmesan cheese, parsley, salt and pepper.
Dip the fillets into the beaten egg, then into the bread crumb mixture, coating the fish completely.
Place salmon onto a well greased baking sheet. Sprinkle remaining bread crumb mixture evenly over salmon, pressing down gently so it adheres to the fish.
Bake for 15 to 25 minutes, (depending on the thickness of your fillets) or until fish is lightly browned and flakes easily with a fork.

WOW! What LOVELY photos and I LOVE your parmesan cheese crust too! I often add parmesan cheese when cooking cod and chicken, but must try it on salmon now!
