My husband asked me to make some oatmeal cookies today, but without the raisins. That sounded boring to me, so I added chocolate and peanut butter chips instead and they came out delicious. Crispy on the outside, soft and chewy on the inside. They got a big thumbs up from my entire family.
Peanut Butter and Chocolate Chip Studded Oatmeal Cookies
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1 cup White or Brown sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups old fashioned oats
1/2 cup each peanut butter chips and milk chocolate chips
1. Heat oven to 350 degrees.
2. Beat together butter and sugar until creamy.
3. Add eggs and vanilla and beat well.
4. Combine flour, baking soda, cinnamon and salt with a wire wisk.
5. Add to sugar mixture and mix well.
6. Stir in oats and chips and mix well.
7. Drop by heaping tablespoons onto an ungreased cookie sheet.
8. Bake 12 to 15 minutes or until golden brown.
9. Cool for 5 minutes on cookie sheet, then transfer to a wire rack to cool completely.
Makes about 20 large cookies.

Congratulations on starting your blog! I jsut started blogging a few months ago, it is so much fun! Your cookies look great. My favorite is oatmeal chocolate chip, but I never thougt of using peanut butter. Great idea!
