Peanut Butter Banana Muffins

It’s time for Group B’s reveal in The Secret Recipe Club! I normally post in Group D, but an extra hand was needed this month for Suzanne’s group, and I was more then happy to be that hand. : )

I received Julie’s blog A Little Bit of Everything From the Good Life. She loves to cook, travel and garden, three of my passions too, so I was excited to check her recipes out. I don’t know if anybody else does this, but while I browse through pretty much the whole blog I’m assigned to, I usually know which recipe I’m going to make just from the name of it. If the name grabs me and lets me know it has some of my favorite foods in it, then no matter how much further I may look, I always wind up coming back to my first pick. Julie’s blog was no exception. As soon as I seen her recipe for Peanut Butter Banana Muffins, I was hooked. Muffins and coffee are one of my favorite breakfasts, and with these containing peanut butter and bananas, two more favorites, the deal was sealed.

This recipe didn’t disappoint either. They came out wonderfully moist and delicious, and they got two thumbs up from the whole family. Thanks Julie for giving me another winning recipe to add to my recipe file. : )

Peanut Butter Banana Muffins

These would be fabulous if you added some chopped pecans or walnuts.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup peanut butter
  • 2 bananas, mashed
  • 1 teaspoon vanilla
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda

Directions

  • Preheat oven to 325 degrees.
  • Line 12 muffin tins with paper muffin liners.
  • In a large mixing bowl cream together butter and sugars.
  • Add eggs and vanilla and beat well.
  • Stir in peanut butter, bananas, flour and baking soda until well blended.
  • Fill muffin cups 3/4 full and bake for 20-22 minutes, or until a toothpick tester comes out clean.
  • Move muffins to a wire rack to cool.

Notes

Don't over bake or the muffins will become to dry.
