These could very well be our families new favorite pancakes. They are fluffy and golden, with the yummy taste of peanut butter and bananas throughout, without being over powering, while the peanut butter syrup is heavenly and addictive. Don’t let the name fool you, these babies are DELICIOUS.
Peanut Butter-Banana Pancakes with PB Syrup
Adapted From: Mr Breakfast
3/4 cup Syrup
6 tablespoons Peanut Butter
2 medium ripe Bananas
2 cups Pancake Batter
1/2 teaspoon Ground Cinnamon
Cooking Spray
To Make Syrup:
Whisk together syrup and 1/4 cup peanut butter in medium microwave safe bowl until smooth. Microwave on high 30 to 60 seconds to warm. Set aside
Pancakes:
Mash 1 banana in large bowl. Add pancake batter, cinnamon and remaining 2 tablespoons peanut butter. Stir until blended.
Coat griddle with non stick cooking spray. Heat over medium heat. Pour 1/4 cup of the batter for each pancake onto griddle. Cook pancakes until bubbles begin to break on surface. Flip and cook other side until golden brown.
Slice remaining banana and serve pancakes topped with sliced fruit and peanut butter syrup.
