You’ll like these cookies because they’re SUPER easy to make, and use everyday ingredients you normally keep on hand. I like them not only because they’re good, but they’re gluten free too. I make these at least once a month, my whole family loves them.
Peanut Butter Cookies {GF}
2 cups peanut butter
1 1/2 cups sugar, firmly packed
1 tsp baking soda
2 eggs
sugar for rolling, (I used sparkling sugar, but you can use regular sugar, or none at all)
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
In a stand mixer on medium speed, beat peanut butter, sugar and baking soda until well blended (about 1 minute). Add eggs and mix on low-speed just until blended.
Scoop out about 1 Tbs of the dough for each cookie and roll into balls. Roll in sugar and place about 2-inches apart on cookie sheet. Flatten slightly with a fork, leaving a criss-cross pattern.
Bake until cookies are puffed and cracked but still a little bit moist looking, about 11 to 13 minutes. Transfer to a rack and cool.
Makes about 3 dozen
