My husband and son love pecan pie, so when I came across this recipe I knew I had to try them. I don’t have any mini muffin tins, so a quick search online showed that you could use any size pan to make these beauties. I also found out that my girl Paula Deen makes these to, a BIG plus in my book. It’s hard to believe that these tasty treats only have five ingredients in them. They came out tasting super yummy and just like a pecan pie, but without the fuss. After reading that these have a tendency to stick to the pan, I decided to use paper liners. I will definitely be making them again.

Pecan Pie Muffins

1 cup packed light brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cup butter, softened
2 eggs, beaten

Preheat oven to 350 degrees. Line a muffin tin with paper liners.
In a medium bowl, stir together brown sugar, flour, pecans, butter and eggs until smooth. Spoon the batter into the prepared muffin cups 3/4 full.
Bake at 350 degrees for 18 minutes. Cool on wire racks when done.

Makes 12 regular size muffins
