I’ve been following the Gaps Diet recently. I’ve done a lot of research on it, and it makes good sense to me as to how my health is, and how it’s associated with my digestive health. This smoothie recipe I came up with follows the guidelines of the Gaps diet. Everything in it is Gaps legal and taste wonderful. One of the ingredients I added was coconut oil. I know that may sound weird to some of you, but coconut oil is very nutritious and good for you. Nearly 50 percent of the fat in coconut oil is of a type rarely found in nature called lauric acid, a “miracle” compound because of its unique health promoting properties. Your body converts lauric acid into monolaurin, which has anti-viral, anti-bacterial and anti-protozoa properties. And my favorite, It aids in weight loss! All very good things. There is a lot more benefits to coconut oil, which you can read about in this article from Dr. Joseph Mercola HERE. The thing I loved the most was how the coconut oil gave the smoothie a delightful, tropical flavor. It was one of the best smoothies I’ve ever made, and I’ll definitely be drinking it on a regular basis.
This recipe is also gluten free and dairy free.
Pineapple-Blackberry Coconut Smoothie
1 cup coconut milk
1/2 cup frozen pineapple chunks
1/2 cup frozen blackberries
1 Tbs. honey
1 tsp. coconut oil
Place all ingredients into a blender, and blend for about 30 seconds, or until smooth and slushy. Add a splash more milk if mixture becomes to thick. Serve and enjoy.
Makes 1 large serving

I don't have coconut milk in the house but I am going to try these flavors with Greek yogurt for our morning tomorrow.
That’s what I like about a smoothie, you can use just about anything you want to make them. I hope you all enjoyed them. I have one almost every day, especially in the warmer months. The flavor combos are almost endless, and they’re so healthy.
