Fall recipes are finding there way into my menu a lot lately. The cooler days of Autumn turn my thoughts to comfort food, and what says Fall more then apples? The sweet apple, smoky onion and savory pork in this dish combine to make a meal that sings the praises of this time of year.
This a hearty and filling dish, that is easy to make and taste great. The key to making this meal so flavorful is to not overcook the pork chops. You want to cook your pork JUST to the point of no longer being pink in the middle. Over cooking is what makes a pork chop tough and flavorless.
Add 2 tablespoons of olive oil to a large skillet over medium heat and arrange pork chops in pan. Season to taste with salt and pepper.
Cook pork chops, turning every 5 minutes until no longer pink in the center. About 20 minutes.
Transfer pork chops to a serving dish. Cover and set aside.
Combine apple, onion, the other tablespoon olive oil, thyme and salt in skillet.
Cook over medium heat, stirring occasionally until apples and onion are lightly browned, about 15 minutes.
Top pork chops with apple-onion mixture and serve immediately.
