It’s time for Group D’s reveal of the Secret Recipe Club. My assignment this month was Cooking Whims, a blog owned and written by the talented Megan. When I began browsing her blog, I wanted to find a main dish to cook, and found several yummy looking options, like her Honey Sesame Chicken, Pan Fried Steak with Whiskey Cream Sauce and Mozzarella Stuffed Turkey Burgers. My husband, with the insatiable sweet tooth had other ideas though.
“What kind of cookies does she have in her blog”, he asked? I knew after that making anything else would be futile, so cookies it was. (I still have those three recipes above bookmarked to try though.) After browsing through all of the choices she had, it came down to either her apple cookies or the pumpkin cookies. I finally chose the Pumpkin Cookies with Brown Sugar Glaze. One because I have a stockpile of pumpkin in my pantry for the holidays, and second because I have an apple pie planned for the apples I have hidden from my family. Why do I have them hidden you ask? So they don’t eat all of them with the yummy Caramel Dipping Sauce I discovered a few weeks ago and they keep asking me to make all the time.
These cookies are fantastic with a wonderful soft texture, just like little cookie pillows. They’re delicious by themselves, but the brown sugar glaze pairs with them beautifully and really takes they’re taste up to the next level. The only changes I made to the recipe was to substitute butter for the shortening that was called for, left out the raisins because we don’t care for them, added some baking powder along with the baking soda to make sure they came out puffy, and used a little extra flour because the dough seemed pretty sticky to me. It probably had something to do with me using butter instead of shortening, but in the end they came out looking and tasting delicious. These will definitely be included on the dessert table come Thanksgiving time.
Preheat oven to 375 degrees.
In the bowl of a kitchen aid mixer, cream together butter, sugar, and pumpkin. Mix until well combined.
Add the egg and continue mixing until blended.
In a seperate bowl, mix together the dry ingredients with a whisk.
Gradually add the flour mixture to the pumpkin mixture while the mixer is on low speed until well blended, scraping the sides of the bowl as needed.
Drop dough by tablespoons onto a parchement paper lined cookie sheet.
Bake for 10 minutes or until cookies turn a light golden brown. Do not over bake.
Remove from oven and transfer to a cooling rack.
For the Glaze
In a small saucepan over medium heat, heat milk, butter and brown sugar until the sugar is dissolved.
Add the confectioners sugar and vanilla
Stir glaze constantly while cooking, otherwise it will become hard and to sticky to spread on the cookies. Cook for 5 minutes.
If you notice the glaze is becoming to stiff, add a bit more milk to it, a tablespoon at a time until you reach a drizzling consistency.
Drizzle or spoon the glaze over the cookies. (A piece of wax paper under the cooling rack comes in handy here.) Work quickly as the sauce sets up pretty fast.
Cookies may be stored in an air tight container, along with a piece of bread, and will remain soft for several days.
