One of my favorite things about Fall time besides the cooler temps, is the wonderful scents of Fall. Apples, cinnamon and pumpkin are a few that come to mind, and you get all three in this wonderful granola I’m sharing with you today. This stuff smells absolutely AMAZING while it’s baking, and had my whole family thinking I was baking a pumpkin pie. Sorry family. Once they tasted this granola though, they didn’t miss the pie… to much.
This granola is the perfect breakfast for busy mornings at home or on the go, as well as a yummy snack. My daughter loves to grab a handful to munch on while she’s doing homework. My favorite way is to sprinkle some on top of yogurt. I didn’t add any, but I bet dried cranberries or raisins would be good in this to.
This granola is delicious as a snack, added to yogurt, or eaten with milk as a cereal.
In a saucepan mix together brown sugar, maple syrup, apple sauce and pumpkin puree. Bring to a boil and remove from heat.
In a large bowl, mix oats, nuts and spices. Add the pumpkin mixture and stir until well coated.
Spread mixture evenly onto a large baking sheet. (Make sure to spread it thinly.) Bake at 375 degrees for 20 minutes.
Remove pan from oven and stir. Return to oven then turn oven off.
Allow to sit in the oven overnight. The next morning, remove granola and store in an airtight container.
