Pumpkin Pancakes

When it comes to fall, I cant get enough of pumpkins. Pumpkin recipes, decorations, jack-o-lanterns… and the smells of fall! Pumpkin pie, apples, cinnamon, mulled cider, it all just makes me feel so warm and comfy. Like these pumpkin pancakes. They smell so good while cooking, just like Fall time, and are equally delicious. It put me in a good mood as I cooked them, and a better mood after I ate them. I Love this time of year.

Pumpkin Pancakes

Pumpkin Pancakes

1 1/2 cups buttermilk
1 cup pumpkin puree
1 egg
2 tablespoons applesauce
1 cup whole wheat flour
1 cup all-purpose flour
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon

Combine flour, baking soda, baking powder, brown sugar, salt, and cinnamon.
Combine buttermilk, egg, pumpkin and applesauce.
Add flour mixture to wet ingredients and mix until batter is moistened, but still lumpy.
Pour 1/4 cup batter for each pancake and cook approximately 3-4 minutes per side, on a buttered griddle over medium heat.
Serve with your favorite toppings.
