Red Velvet Cake with Cream Cheese Frosting

I’ve been pretty ill the last week, so I haven’t been able to post lately. This is the dessert I made for my families Valentines Day supper. Red Velvet Cake with Cream Cheese Frosting. This cake is really chocolaty and rich, and was a perfect ending to our meal of grilled steaks and Twice Baked Potatoes. (Posting that recipe next.) My daughter frosted and decorated the cake and I think she did a great job.
Red Velvet Cake with Cream Cheese Frosting
1 stick butter, softened
1 1/2 cups sugar
2 eggs
2 ounces red food coloring
2 Tablespoons cocoa (heaping)
1 cup buttermilk
2 1/4 cups flour
1 teaspoon vanilla
1 teaspoon baking soda
In a large mixer bowl, cream together butter and sugar. Add eggs one at a time, beating well after each addition. Next add the red food coloring and cocoa and blend well. Mixing on low speed, add buttermilk and flour alternately. Add vanilla flavoring and baking soda into the batter and mix well, but do not over-beat to ensure a light fluffy cake.
Transfer into two floured and greased 9 inch round cake pans. Bake in preheated 350 degree F oven for 25-30 minutes. Cool.
