Sometimes the simplest foods are the best, and this sauteed spinach proves that point deliciously. It turns out Popeye was right, spinach is a nutritional superstar. It’s loaded with vitamins and minerals, some of which are hard to find in other foods, as well as a good source of iron and fiber.
This dish cooks quickly, so be sure to stay by the stove and monitor it closely for the best color and flavor. While a 12 ounce bag of spinach may seem like a lot for one person, it cooks down significantly, and is the perfect portion size for one serving.
In a large pan over medium heat, warm the olive oil and garlic. Cook for about 1 minute or until the garlic releases it's aroma.
Add the spinach, along with the salt and pepper and allow to cook for about 30 seconds. Stir the garlic and spinach together and let cook for another 30 seconds to a minute while still stirring.
Cook just long enough to warm and wither the spinach but the leaves are still bright green.
Serve warm with a squeeze of lemon juice if desired..

I love fresh spinach salad, but this was the first time I enjoyed it sauteed like this and it was delicious. I’ve been trying to eat a lot more spinach, as I am anemic and am trying to get more iron in my diet.
