I’ve always wanted to try Quiche Lorraine, but my family never warmed up to the idea, so I never made it. I finally decided to give it a try after seeing recipes for mini Quiche. Why not make a single serving of it just for me? So I grabbed a ramekin and started mixing. What came out of the oven was a sight to behold, it was so puffy! It was a shame that it deflated before I could get a picture of it. Deflated or not though, it was savory and delicious. So if you would like to treat yourself to a special breakfast for one, then this is a must try.
Single Serve Crustless Quiche Lorraine
2 eggs
splash of milk
1 slice bacon, cooked and crumbled
1/8 cup shredded swiss cheese
1 green onion blade, finely chopped
sea salt and pepper to taste
Preheat oven to 350 degrees.
Grease a ramekin with butter or coconut oil. Whisk eggs, milk, salt and pepper in a small bowl till well blended.
Pour eggs into prepared ramekin. Sprinkle with cheese, green onion and bacon.
Bake for 25 - 30 minutes, until eggs are puffy and a toothpick inserted in the middle comes out clean.

Oh I used to make these for breakfast when my daughters were little - they loved having their own little bowls. I must make them again!

DELICIOUS! I made this today and loved it. I did change a couple of things… I added an extra slice of bacon because I LOVE bacon and used a slice of Finlandia, lactose-free swiss cheese cut into tiny pieces (that's all I had). I was out of green onions, but threw in some diced zucchini (to make up for the extra bacon). It was yummy, even without a crust. This is my new weekend splurge. Thank you so much for posting this!
