It’s that time of year again… Christmas Cookie time! I love whipping up treats to have on hand for my family and holiday visitors, as well as giving away as gifts. This cookie is always included in those treat bags. Imagine a delicious, nutty snickers, wrapped in a yummy, soft peanut butter cookie. That’s what you get when you bite into one of these treasures. If you like peanut butter and chocolate as much as I do, then you’ll love these cookies.
Snickers Cookies
Ingredients
- 1 bag Snickers Miniature Candies (Regular sized Snickers bars, chopped into bite size pieces may be used)
- 1 cup Butter, softened
- 1 cup Brown Sugar
- 1 cup White Sugar
- 1 cup Creamy Peanut Butter
- 2 Eggs
- 2 tsp Vanilla
- 3 1/2 cups All-Purpose Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
- Chocolate Glaze {optional}
- 1 cup powdered sugar
- 2 tablespoons unsweetened cocoa
- 1 tablespoon milk
- Mix powdered sugar, unsweetened cocoa and milk together thoroughly. Add additional milk as needed to thin mixture enough to drizzle from a spoon.
Directions
- Preheat oven to 350 degrees.
- Combine butter, peanut butter, and sugars using a mixer on medium to low speed until light and fluffy.
- Slowly add the eggs and vanilla until thoroughly combined. Then mix in your flour, salt, baking soda and baking powder. Cover and chill dough 1 hour.
- Remove dough from fridge. Divide dough into tablespoon size pieces and flatten slightly.
- Place a snickers mini in center of each. Form a ball around the snickers.
- Roll in palms of your hand to form a smooth ball with the Snickers bar totally covered with the dough.
- Place on a ungreased cookie sheet and bake for 10-15 minutes.
- Let cookies cool about 2 minutes then remove to a rack to cool completely.
- Drizzle chocolate glaze over each cookie. {optional}
