Cabbage isn’t big on most peoples menus, but it can be delicious if fixed the right way. Like this Southern Fried Cabbage recipe. It makes a slightly crispy but tender and flavorful dish, that is liked even by those who don’t normally care for cabbage. This recipe is super simple and only uses two ingredients, plus salt and pepper. It also provides a good dose of vitamins and fiber, all pluses in my book. Also, don’t let the word, “Fried” scare you. This recipe only uses 2 tablespoons of bacon grease, just enough to give this dish it’s wonderful taste.

Southern Fried Cabbage

6 strips of bacon
1 head cabbage, cored and coarsely chopped
salt and pepper to taste

In large skillet, fry bacon until crisp.

Place bacon on paper towel lined plate and remove all of the bacon grease from the pan except for about two tablespoons.

Sliced Cabbage

Place chopped cabbage in skillet.

Crumple cooked bacon on top of it. Cook over medium high heat, stirring constantly, for about five minutes. Reduce heat to low and cover.

Continue cooking until cabbage is done to your desired tenderness, five to ten minutes more. Salt and pepper to taste.
