Southern Fried Chicken
Chicken leg quarters, separated
2 c flour
1 tsp sea salt
1 tsp. seasoning salt
1/4 tsp pepper
1/2 tsp garlic powder
*Marinade
2 c buttermilk
*Place buttermilk and chicken pieces in a resealable plastic bag and allow to marinate for at least 2 hours or overnight in the refrigerator.
In a large bowl combine all other ingredients except chicken. Remove chicken from marinade and immediately dredge chicken in the flour mixture well. Place the chicken on a plate for 10 minutes. Place chicken in a deep fryer set at 350 degrees. Do not over crowd the fryer or the chicken will not become crispy. Cook for 15 to 20 minutes, depending on the size of the chicken. Remove to a paper towel lined plate and cover with aluminum foil to keep warm. Continue with the rest of the chicken until all pieces are done.

yum yum….would it still be good if it was baked do you think?
I really don't know Tara. I think it would be a good experiment though, and I'll try baking a piece when I make this again. If you happen to try it before I do let me know how it turns out, I'm really interested in finding out now.

Katie- I try not to fry it to often, (trying to eat healthy) but I make it every couple of months for a treat. Plus, my husband would be very unhappy if he didn't get "bad" food once in awhile. :)
Fried chicken is the ONE thing that I DO fry once a month. My family insisted on it! I've wondered what the difference soaking in buttermilk would make. I've never done it.
Sandra- I think marinating it in the buttermilk makes the meat more tender and flavorful. It may just be my imagination, but I can tell a difference when I skip that step.
