It’s Crazy Cooking Challenge time again over at Mom’s Crazy Cooking. This month, Tina chose Blueberry Muffins. Muffins make a great on-the-go breakfast, and with Springtime here blueberries were the perfect choice. Our mission in the CCC, is to find another blog with a recipe we want to try, make it, then all of use share our discoveries on the same day. I found my yummy blueberry muffin recipe over at My Fiance Likes It So It Must Be Good. She shares a hilarious story of her first attempt at making them, and forgetting to add the sugar. Oh how I laughed, because I’ve made that same mistake in my earlier cooking days. Believe me, once you make that mistake, you won’t do it again! lol
Springtime Blueberry Muffins
2 cups flour
1/2 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder
1 cup buttermilk
2 eggs
1/4 cup vegetable oil (I used coconut oil)
1/2 teaspoon vanilla extract
2 tablespoon lemon juice
1 cup blueberries
Preheat oven to 500 degrees. Fill muffin tin with liners.
Whisk flour, sugar, salt, and baking powder in a medium bowl. Fold in blueberries.
In another medium bowl, beat buttermilk, eggs, oil, vanilla, and lemon juice until combined.
Mix liquid ingredients with dry ingredients until incorporated. Do not over mix.
Fill muffin liners about 2/3 full. Place in oven and immediately drop temperature to 400 degrees.
Bake for about 15 minutes, or until a toothpick comes out clean.

Very cute picture of springtime muffins. They look very good!
These look delicious. I love the muffin cups you used. I noticed that you used coconut oil, and I have seen this on a couple other recipes. I have never used this, but I am curious about it. Is it healthier?

Saw these muffins too at Peggy's blog before. Using coconut oil instead vegetable oil does give the muffins lots of extra flavours.
