Lord this has been a rough two weeks on me. First having issues with my medical problems and medicines, and just when I thought I about had it licked, now I come down with a cold! It’s almost enough to make a person say, “Bah-Humbug”! I did say almost! :) To take my mind off things and cheer myself up, me and my daughter have been busy making some cookies today. Saltine Toffee and Chocolate Almond Snowball Cookies so far, with sugar cookies coming up next. For now though, here is a delicious recipe for Baked Sweet Potato Oatmeal. This stuff is delicious, and the leftovers can be flash frozen in individual serving sizes for quick breakfasts later. Just microwave till warmed through and your set.
Sweet Potato Baked Oatmeal

3 C old-fashioned rolled oats
1/2 C brown sugar {or, honey/maple syrup}
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
2 tsp. vanilla
1 egg
1 C milk
2 T applesauce
3/4 C pureed sweet potato
Maple Syrup, for drizzling over the top
Mix together the 3 C oats, baking powder, brown sugar, salt, cinnamon and nutmeg in a large bowl.
Add in the applesauce, sweet potato puree, egg, milk and vanilla. {If you are using a natural sweetener like honey or maple syrup, add it in this step}
Stir until moist. Pour into a lightly greased 8×8 inch baking dish. {If making the night before, stop here. Cover and refrigerate overnight.}
Sprinkle the top with cinnamon, and drizzle maple syrup over the top. Bake at 350 degrees for 30 - 40 minutes, until lightly browned and center is set.
Serve warm.
