I’ll admit it, I have an addiction… to cauliflower rice! I seriously eat it at least 3 times a week. Cauliflower rice? Now hear me out before you turn your nose up at the idea of cauliflower being used as a rice replacement. This versatile vegetable is low calorie, grain and gluten free, and absolutely delicious. This fried “rice” recipe I’m going to share with you today is a perfect example.

Almond Flour “Cornbread”
You are not going to believe this, I found a delicious, gluten free, grain free, and Paleo friendly recipe for cornbread! I was kind of sceptical when I first seen this one. How in the world could something that doesn’t have cornmeal in it, taste like cornbread? I was willing to try it though, since I really missed having it when I made chili or soup.
German Pancakes

Creamy Spinach and Tomato Omelet
As a lot of you have done I’m sure, I’ve vowed to eat healthier in the new year. Not a hard decision to make after spending the first week of the year on vacation in Florida, and basically living on fast-food during that time. If eating that junk every day for a week doesn’t turn you against it, I don’t know what will. Even my husband and kids who love the stuff got sick of it.
