KFC Coleslaw

My family isn’t a big fan of KFC chicken, but we LOVE their coleslaw. So I was thrilled when I found a copycat recipe for it on the copycat recipe guru himself, Todd Wilbur’s website. It’s hard to find good coleslaw, but this recipe is the perfect mix of tangy and sweet, just like the real thing. The directions say to chill for a few hours first, but before I stuck it in the fridge, I tried a bite. It was ok, but nothing special. But after it had time to chill in the fridge for a bit, it came together and became WOW. My husband told me that it was the only coleslaw recipe he wanted me to make from now on, and I totally agree.
KFC Coleslaw
1/2 cup mayonnaise
1/3 cup sugar
1/4 cup milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
1 head of cabbage, finely chopped (My food processor done this perfectly)
2 medium carrots, finely chopped (Food processor again)
2 tablespoons minced onion
Pour cabbage and carrot mixture into large bowl and stir in minced onions. Combine the mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt and pepper in a large bowl and beat until smooth. Pour over vegetable mixture and mix thoroughly. Cover bowl and refrigerate several hours or overnight before serving.
