Cinnamon Sugar

Posted in DIY Foods

Here is another great homemade spice blend for you, Cinnamon Sugar. This is a super simple recipe that I love making up in batches to have on hand whenever the urge hits me. It’s the perfect combination of sweet with a definite, but not overbearing cinnamon taste. Not only does it taste good, but it’s frugal too. The last time I was at the store, I checked the price of a cinnamon sugar blend, and they wanted $2.70 for a tiny little bottle of the stuff! Totally unnecessary when you can make a large batch for way cheaper.

Crock Pot Applesauce

Posted in fruit

This recipe is so easy and simple, it almost isn’t a recipe. But when you taste this applesauce for the first time, your mouth will sing it’s praises. After my first spoonful, I almost couldn’t stop eating it, it’s that good. I will never go back to store bought again, that’s for sure.

Crock Pot Applesauce

Crock Pot Applesauce

8 apples - peeled, cored and roughly chopped
1 cup water
1/3 - 1/2 cup sugar (The amount you use depends on the sweetness of your apples. Mine were tart, so I used 1/2 cup)
1/2 teaspoon cinnamon (optional)

In a crock pot combine apples, water, sugar, and cinnamon.
Cover and cook on high for 1 hour, then turn to low heat and cook an additional 6 hours.
Allow to cool slightly, then mash with a fork or potato masher to desired consistency.
Store in the refrigerator in an air-tight container and use within 2 weeks.

Chocolate Pecan Fudge

Posted in candy

I’ve tried many times over the years to make fudge, but failed miserably. So much so that I gave up and just bought pre-made fudge when I had a craving for some. Recently though, my sweet hubby said he would love some fudge, but not just any fudge, he wanted homemade. So off I went once again on an internet search for a, hopefully, fail proof fudge. I finally found one that seemed pretty easy, and had good reviews from those who had already tried it. I set to work and lo and behold, it set up! I was super excited that I had FINALLY been successful at making fudge. It came out firm, but still creamy and rich.

Chocolate Pecan Fudge

Chocolate Pecan Fudge
1/2 cup butter
1 cup semisweet chocolate chips
1 teaspoon vanilla extract
2 cups white sugar
1 (5 ounce) can evaporated milk
10 large marshmallows
1 cup chopped pecans or walnuts

Line an 8x8 inch baking dish with aluminum foil.

Place butter, chocolate chips and vanilla in a mixing bowl. Set aside.

In a medium saucepan over medium high heat, combine sugar, milk and marshmallows.

Bring to a boil, stirring frequently. Reduce heat to low and cook 6 minutes more, stirring constantly. Remove from heat.

Pour marshmallow mixture over contents of mixing bowl.

Beat entire mixture with a beater until it thickens and loses its gloss. (About 3 minutes)

Quickly fold in nuts and pour into prepared pan.

Refrigerate overnight. Lift fudge from dish by the foil. Peel foil off, and cut fudge into small squares.

Store leftovers in the refrigerator.

Snickerdoodles

While Snickerdoodles are basically a jazzed up sugar cookie, there’s certainly nothing basic about their taste. Tender and buttery with a delightful cinnamon sugar flavor, it just wouldn’t be Christmas without these on our Christmas cookie tray.
