I think, no I know this is the best chocolate cake I have ever tried. It’s so light and moist, and the chocolate taste… just wonderful. Why make a boxed mix, when you can whip up a homemade one just as quickly, and that tastes so much better? I used my Cream Cheese Frosting, my husbands favorite, to top it off. Pure bliss.
The BEST Chocolate Cake EVER
1 cup butter, softened
2 cups sugar
3 eggs
1 teaspoon each vanilla and salt
2 teaspoons baking soda
1/2 cup unsweetened cocoa
2 1/2 cups flour
2 cups buttermilk
In a large bowl, put the softened butter and sugar. Using electric beaters, cream them together until they are light and fluffy.
Add the eggs and beat until the mixture is satiny smooth and emulsified.
Next add the salt, vanilla, baking soda and cocoa. Beat again, until the cocoa is well mixed into the batter. Add the flour and buttermilk into the bowl and beat for about two minutes.
Pour the batter into a well oiled 9 x 13 baking pan, or two 9-inch round pans, or into a paper lined muffin tin.
Bake the cake at 350 degrees for 50 minutes in the large pan, 35 to 40 minutes in the smaller pans, or for 15 to 17 minutes for the cupcakes, or until a toothpick inserted into the cake comes out clean..
Remove from the oven and allow to cool completely. Frost as desired.
