Last week I found a recipe for Vanilla Wafers and couldn’t wait to try them. I’ve never had a homemade version of these, instead relying on the kind that comes in a box. I decided to give them a try since they seemed fairly easy to make. I’m glad I did, they are LOTS better then the store bought kind. My family thought so to, and I barely saved enough to make my banana pudding recipe. These are some extremely tasty cookies.

Vanilla Wafers

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 2/3 cup sugar
  • 1 large egg
  • 2 tablespoons vanilla
  • 1 tablespoons whole milk

Directions

  • Pre-heat oven to 350 degrees.
  • Sift together the flour, baking powder, and salt in a small bowl and set aside.
  • Cream the butter and sugar in the bowl of a stand mixer on medium speed for 2 minutes, stopping to scrape down the sides of the bowl after 1 minute.
  • Add the egg and incorporate on medium speed for 30 seconds.
  • Add the vanilla and milk and blend on low speed for 15 seconds. Add the flour mixture and mix on low speed just to incorporate.
  • Scoop the batter in teaspoon-sized balls and arrange them on parchment paper lined cookie sheets. (I got about 30 cookies)
  • Use the heel of your hand to slightly flatten each ball.
  • Bake 15 to 20 minutes, or until golden brown, rotating pan halfway for more even baking.
  • Allow cookies to cool completely before removing them from the pan.
