White Chocolate Chex Nut Clusters

It’s time again for the Secret Recipe Club. I had the pleasure of having Kim’s blog Badger Girl Learns To Cook for my January assignment. Kim and her husband are on a quest to completely eliminate processed foods from their diet and eat whole foods. Something I TRY to do with my own diet, but I still have a long way to go. I found several recipes that I liked and have bookmarked to try at a later date, such as this Bruschetta Salad, and Chicken Enchilada Casserole. While I was searching for a savory dish to make for one of our suppers, my sweet husband seems to have a sense of when I’m looking for a recipe on my assigned blog each month, and was more then willing to direct me to Kim’s dessert section. I finally decided, with my husbands help, to make her White Chocolate Cereal Nut Clusters.

We have a weekly pizza and movie night at our house, and along with pizza and bread sticks, I usually pop up some popcorn to snack on as well. I thought the cereal clusters would be a nice change of pace, and would satisfy my husbands sweet tooth at the same time. I did change the recipe a bit by using rice Chex cereal instead of the ones that Kim uses, and added two kinds of nuts instead of just one. And wowsers did they come out great. The salty and sweet flavors mingled together perfectly, and were super easy to whip up. Thank goodness I only made 1/2 a batch, because my family devoured these crunchy little candies way to fast. What with the pizza and bread sticks we had already eaten, I think we went a tad over our required calories for the day. : )

White Chocolate Cereal Clusters

Thank you Kim for this yummy and easy treat. My family loved them, and it will become a regular addition to our snacking repertoire.

White Chocolate Chex Nut Clusters
3 cups Rice Chex cereal
1/2 cup salted peanuts
1/2 cup slivered almonds
1 1/2 cups white chocolate chips

In a large bowl mix together the cereal and nuts.

In a separate, microwave safe bowl, melt the chocolate chips at 30 second intervals, stirring each time until it is smooth.

Pour the chocolate over the cereal and nut mixture and stir gently until the cereal is thoroughly coated with chocolate.

Scoop out spoonfuls of the mixture and place them on a cookie sheet lined with wax paper or aluminum foil.

Allow to set for 1 - 2 hours until they have hardened.

Store any leftovers, if there is any, in an airtight container.
