Because of health issues, I’m not able to grow my own garden, besides a small indoor one. Due to the graciousness of neighbors gardens and farmers markets though, I am never without fresh produce during the summer months. Zucchini seems to be in abundance right now, and I have been blessed with several arm-loads this past week. That kept me busy with my food processor and hand grater, and I now have several large bags of shredded zucchini in my freezer for future use.
This bar recipes was one of the first recipes I tried, besides making fried zucchini. These bars were a winner and were liked by everyone in my family. To me they were a mix between a bar and a cake, but who cares when they are so yummy.
Preheat oven to 350 degrees and grease a 9×13 inch baking pan.
Beat eggs; add sugar and oil.
Add the zucchini and vanilla; blend to mix well.
Sift the dry ingredients together and add to the egg mixture. Mix well.
Pour batter into prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted comes out clean.
Spread frosting on top of the bars when they are cooled.
Bars will become firm when refrigerated.
