Zucchini Cookies

Oh-My-Goodness are these cookies good! Who would think adding zucchini to a cookie would make them so moist and yummy? These tasty gems came out soft and moist in the middle, almost like a cake, but had the slight crunch of a cookie on the outside. Delicious. Ok, now that I’ve bragged about them enough, go make some ASAP. You won’t be disappointed.

Zucchini Cookies

Moist on the inside, crisp on the outside cookies your family will never guess is full of good for you zucchini.

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1/2 cup light brown sugar
  • 2 eggs, beaten
  • 3 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoons salt
  • 1 cup peeled zucchini, grated
  • 1 cup chocolate chips
  • 1/2 cup chopped pecans

Directions

  • Preheat oven to 350 degrees.
  • Cream the butter and sugar.
  • Add eggs, flour, baking soda, baking powder, cinnamon and salt; mix well.
  • Stir in the zucchini (batter will look really dry at first, just keep mixing).
  • Fold in chocolate chips and nuts.
  • Drop by tablespoonfuls onto a greased cookie sheet.
  • Bake 10-12 minutes or until golden brown on the edges, and lightly browned on top. Do not over bake.
