I shared a recipe for Hot Chocolate Mix yesterday, and now I’m excited to share a recipe I made with that mix. Hot Chocolate Cookies. As soon as I seen this recipe I couldn’t wait to make it. Unfortunately my week got super busy, as well as coming down with some kind of stomach bug that totally took away any desire to cook or eat for several days. So that’s the reason I’m sharing my weekly Christmas series with you a few days late.

Hot Chocolate Cookies

Better late then never when it comes to these yummy cookies though. They’re rich, chocolaty and taste just like hot cocoa, only in cookie form. With hot chocolate mix, chocolate chips and mini marshmallows  how could they not? I know they’re a winner because not only did they pass my taste test, but my picky husband, who doesn’t even care for marshmallows said these were some of the best cookies he has ever eaten. Wow. These will definitely be on my cookie tray for the holidays.

If you use store bought cocoa mix make sure it isn’t sugar free or the one that has mini marshmallows, the cookies wont turn out right.

Hot Chocolate Cookies

Hot Chocolate Cookies

Makes about 4 dozen cookies

1 cup unsalted butter, at room temperature
1 cup granulated sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla extract
3 1/4 cups all-purpose flour
1/2 cup plus 3 Tablespoons Hot Chocolate Mix (store-bought or homemade)
1 1/4 teaspoon baking soda
1 teaspoon salt
1 cup miniature semi-sweet chocolate chips
2 cups miniature marshmallows

Preheat oven to 350 degrees.

Line baking sheets with parchment paper.

In a stand mixer, cream together the butter and sugars until light and fluffy. Add the eggs, one at a time, beating until combined after each addition. Blend in the vanilla.

In a separate bowl, whisk together the flour, hot chocolate mix, baking soda and salt. Slowly add to the wet ingredients and mix just until combined, scraping the sides of the bowl as needed. Fold in the chocolate chips.

Place tablespoon size dough balls onto the prepared cookie sheets.

Bake for 7 minutes. Remove the cookies from the oven and working quickly, carefully add about 5 marshmallows to the top of each cookie, gently pressing them into the cookies.

Return cookies to the oven and bake an additional 2 minutes, or until the marshmallows start to puff.

Remove from oven and let cool on the cookie sheets for 10 minutes.

Transfer to a wire rack to finish cooling completely.
