Lemon Rosemary Chicken

We eat a lot of chicken here on the homestead. Not only is it an economical meal, but there are so many different ways you can prepare it, that it’s the perfect choice for me to make for my family.

Lemon Rosemary Chicken

This dish is full of flavor from the lemon juice and rosemary, and couldn’t be easier to whip up. Perfect for my busy schedule. You can assemble it to marinate in the morning, then just pop it in the oven that evening, and within 30 minutes it’s ready to serve to your family. Fast, flavorful and frugal equal all the makings of the perfect recipe in my book.

Lemon Rosemary Chicken

Ingredients

  • 8 skinless boneless chicken breast halves
  • 1/2 cup olive oil
  • 1/2 cup fresh lemon juice
  • 6 bay leaves, broken into small pieces
  • 3 tablespoons chopped fresh rosemary {Dried may be used, reduce to 1 tablespoon}
  • 4 large garlic cloves, pressed
  • 1 teaspoon salt
  • Hot pepper sauce to taste
  • 2 tablespoons olive oil mayonnaise

Directions

  • Add oil, lemon juice, bay leaves, rosemary, garlic, salt and hot pepper sauce together in a bowl. Whisk until blended. Pour marinade over chicken and place in the refrigerator for at least 2 hours to marinate.
  • Remove chicken from marinade and transfer to a baking sheet. Set marinade aside.
  • Place chicken in the oven that has been preheated to 425 degrees, on the lowest rack.
  • Bake for 30 minutes, flipping chicken pieces over halfway through cooking time.
  • While chicken is baking, strain the reserved marinade into a saucepan. Discard the solids. Bring mixture to a boil over medium heat and boil 1 minute. This will kill any bacteria that is present from the chicken. Remove from heat and transfer to a bowl. Cool to room temperature.
  • After mixture has cooled, whisk in mayonnaise until smooth. Serve sauce on the side with chicken.
