Due to a cancellation, I had the fun task of making something from two different blogs for this reveal of the Secret Recipe Club! Not a problem since I love going through a new blog and finding something yummy to make and add to my recipe collection.

Lunch Lady Peanut Butter Bars

My second blog today is Ambition’s Kitchen.

Kelli is a wife and mom who loves to cook for her family. We both have the same philosophy about sharing meal times as a family, and how it builds strong family bonds and values. When I went to her blog for the first time, her latest post jumped out at me. It was a recipe for Lunch Lady Peanut Butter Bars. The title and picture intrigued me, so I had to check it out. I wasn’t lucky enough to have these yummy looking dessert bars made  for me when I was in school, which is where this recipe seems to have originated.

Even though I continued browsing her blog, I kept coming back to these peanut butter bars and ultimately decided to make them for the reveal. Wow, are they good! I didn’t have the size of pan the recipe called for, so my bars are a little thicker then what they should be from using a smaller pan. I had to cook them a few minutes longer as well, but they still came out delicious and so good. They are a definite keeper.

Lunch Lady Peanut Butter Bars

You can also add a middle layer of peanut butter if you'd like, but I left it out and it still came out delicious.

Bottom Layer
1 cup Brown Sugar, packed
1 cup Sugar
1 cup Butter, softened
1 teaspoon Vanilla
2 Eggs
1 cup Peanut Butter
1 teaspoon Baking Soda
3/4 teaspoon Salt
2 cups Flour
2 cups old-fashioned Oats
Chocolate Frosting Layer
1/2 cup butter, softened
1/4 cup milk
1 1/2 teaspoons vanilla
3 tablespoons cocoa powder
3 cups powdered sugar

Preheat oven to 350 degrees

Combine first 3 ingredients in the bowl of a mixer and beat until smooth.

Beat in vanilla, eggs and peanut butter.

Add the baking soda, salt, flour and oats and mix well.

Spread into a well buttered jelly roll pan (18"x13"x1"). Bake for 15-17 minutes or until golden and baked through.

Remove from oven and let set until completely cooled.

Once cooled, frost with chocolate frosting (recipe follows) and cut into bars to serve.

For Frosting

In the bowl of your mixer, add all of the frosting ingredients and mix until smooth.

Spread on top of bottom layer, cut into bars and serve.
