Forget the boxed mix, making your own mac and cheese from scratch is easier then you think, and so much tastier. The smooth and creamy results are worth it.

Blue Ribbon Mac and Cheese
8 oz. macaroni, cooked
4 Tbs butter
3 Tbs flour
1/4 tsp salt
dash of pepper
3/4 cup evaporated milk, 1 1/4 cups water, mixed
8 slices american cheese
2 cups shredded colby/jack cheese
1/3 cup shredded colby/jack cheese, seperate (optional)

In a saucepan melt butter over medium heat. Stir flour into the butter until smooth. Add salt and pepper.

Cook for 1 minute, then gradually add milk mixture, stirring constantly. Continue to cook, stirring constantly until slightly thickened. Add cheeses and continue to cook and stir until melted and bubbling.

Pour cheese sauce over cooked macaroni and mix well.

Serve as is, or for an even cheesier treat pour into a buttered, 8x10 baking pan. Sprinkle the reserved 1/3 cup colby/jack cheese over all and bake in a preheated 350 degree oven for 10 - 15 minutes, or until hot and bubbly.

  1. I make a three cheese mac and cheese that my family loves, but it doesn't have either of these cheeses in it. I'm gonna give it a try. I think just about any cheese combination has to be good! I've also never used evaporated milk in mine. Thanks!

  3. YUM!! Nothing like homemade mac and cheese! I've used Paula Deen's recipe for years. This one looks delish too!P.S. I had to laugh at the comment you left on my blog about the "string that surfaced". LOL That is freaking and amazing!
