Creamy Au Gratin Potatoes

My family likes potatoes just about any way I make them, fried, mashed, baked, they’ll devour them. Luckily they are economical as well as nutritious. Did you know potatoes are a good source of fiber, potassium and vitamin C, especially if you eat the skin?
Au gratin potatoes are a delicious side dish that my family really enjoys What’s not to love though with all of that cheesy goodness baked into it. This dish is easy to make, and doesn’t require a lot of ingredients, two of the main things I look for in a recipe besides tasting good.
Creamy Au Gratin Potatoes
Ingredients
- 8 russet potatoes, peeled and thinly sliced
- 4 tablespoons butter
- 4 tablespoons flour
- 1/4 teaspoon salt
- several dashes fresh ground black pepper
- 1 cup evaporated milk and 1 cup water, blended
- 8 slices american cheese
- 2 cups shredded colby/jack cheese
- 1/4 teaspoon garlic powder
- paprika, optional
Directions
- Preheat oven to 400 degrees.
- In a medium saucepan melt butter over medium heat. Stir flour into the butter until smooth. Add salt and pepper.
- Cook for 1 minute, then gradually add milk mixture, stirring constantly. Continue to cook, stirring constantly until slightly thickened.
- Add cheeses and continue to cook and stir until melted and bubbling.
- Butter a 9 x 13 baking dish and layer half of the potatoes into the dish.
- Sprinkle garlic powder over potatoes, then layer the other half of the potatoes. Season with salt and pepper to taste.
- Pour the prepared cheese sauce over the potatoes, coating them completely. Sprinkle with paprika if desired.
- Cover dish with aluminum foil and bake for 1 hour.
- Remove aluminum foil, turn oven down to 350 degrees and continue baking 30 minutes more.
