Pumpkin Pie French Toast Bake

I’ve been on a pumpkin kick the last couple of weeks, and that trend continues today with this delicious Pumpkin Pie French Toast Bake.

Pumpkin Pie French Toast Bake

I cant rave about this dish enough. It’s easy to put together and is perfect for a lazy weekend breakfast. You assemble it the night before, store it in the refrigerator, then just pop it in the oven the next morning. It’s an indulgent meal, without all the work.

The smell while this is baking… heavenly is the only word that comes to mind. If you like pumpkin pie, you will love this french toast dish.

Pumpkin French Toast

Pumpkin Pie French Toast Bake
1 loaf bread, cubed
1 15 oz. can pumpkin puree
6 eggs
2 cups milk
1/2 cup brown sugar
2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg

Lightly grease a 13×9 baking dish. Place cubed bread in dish.

In a bowl, combine pumpkin puree, eggs, milk, brown sugar, vanilla and seasonings. Whisk until fully combined.

Pour on top of the cubed bread, cover and refrigerate overnight or at least 6 hours.

Bake at 375 degrees for 25 – 30 minutes, until lightly browned and set.

Serve with butter and maple syrup.
