Smoked Sausage with Peppers and Onion

Some nights your running late and only have a few minutes to cook, or you forgot to thaw any meat. This is the perfect meal for those nights.
This is a quick dish that couldn’t be easier to prepare. Fully-cooked smoked sausage, red and green bell peppers, and onion combine for a simple but satisfying one-dish main course. Serve with rice or pasta on the side to round out the meal. You could even use this to make sandwiches, which is my husbands favorite way of eating it.
Smoked Sausage with Peppers and Onion
Ingredients
- 1 pound package smoked sausage, cut into bite size pieces
- 2 bell peppers, 1 red and 1 green, sliced
- 1 medium onion, sliced
- 1 tablespoon light olive oil
- 1 tablespoon minced garlic
- salt and pepper to taste
Directions
- Heat the oil in a large skillet over medium heat, add the onions, bell peppers, salt and pepper. Cook, stirring occasionally, until the vegetables are soft and slightly caramelized, about 15 minutes.
- Add the smoked sausage and garlic and continue cooking, stirring occasionally until warmed through and well blended, about 5 minutes.
- Taste for seasonings and serve over Rice.
